Before practicing anything in your dreams, I think you'll definitively need to learn some theory in your WL first, otherwise your brain won't have enough information to put it on the dream and you most probably will lose precious dream time doing things without sense, like playing the high notes on the left side or ignoring the semitones, etc. On the other hand, apparently you'll need to have a good frequency of lucid dreams or at least have a good dream incubation system to put all those things together in your dreams. And talking about dream incubation, what would be better than focusing on the subject during your waking life? 
As Louai said, apparently it's possible to reinforce neural connections in your dreams, but I don't think it would be possible to create them out of nowhere. One thing is knowing a song, other thing is playing it on an instrument I think.
I don't know, as everybody is different and different things work for different persons, perhaps it works different for you, it doesn't harm to give it at try anyway.

I think (especially memorizing how each of the tones sound) could help creating a realistic image of the piano and prevent that some notes may sound wrong
