I like to think of my dreams as reflections, like two mirrors facing each other and the endless reflections within them. Dream objects come and go like a mosaic reflection of things in our mind.
Your ex will always exist in your mind somewhere. And as long as she was the most significant romantic partner in your life, why would she not be reflected from the depths of your psyche into your dreams frequently? And this coworker now, accessible, exciting. She's there in your mind so why not.
The word anima can be convenient here. Anima is a word to conceptualize your subconscious conceptualization of women. It's not a real substantial thing. You can call all women in your dreams your Anima. That can be a useful way to say "it's not my ex. it's my Anima." and if a dream makes you feel a sense of love for your ex, remember your ex really wasn't in this dream. It was your Anima (your subconscious concept of women) and you can enjoy your relationship with your Anima knowing she could have many faces.
Why did you stop mid sex? Well, one moment, you were dreaming of sex with a woman (association: a woman --> your ex) but then you responded with some logic (your ex --> "we're not together anymore") so you leave. It's quite simple really.
If you don't like this theme, you could fix the "Wait, this is my ex but I am not with my ex" logic with "She's my concept of woman, my ex's face is just a placeholder" and then her face might change.
EDIT: Actually, you don't see her face but that's more likely the details didn't appear yet. Dream images are often incomplete. The fact that this woman does not have your ex's face but you just "know" it's her, is more evidence that this is not necessarily your ex. It's very common for me to "know" things for which there is no basis in the dream. For example, I will think people have ill intents toward me but they're actually not antagonizing and they're busy with their own things, paying me no attention. This just shows that the things I "know" in a dream are not necessarily true in the dream. I'm making false, sleepy assumptions. And here, you might just be assuming this woman is your ex because she is the first woman that comes to mind when you see this mystery lady. So if you catch yourself on that assumption, and remind yourself, oh right, I'm just assuming this. She's actually my Anima and can have any face, the dream might then give her a face, because you will be paying attention to the dream rather than imposing your assumptions unto it.
