I went to Catholic school too and yeah the whole fish vs meat did not make any sense to me either. (Though at my high school, the alternative was cheese pizza from Domino’s!)
However, the school restricts what the school sells because the school is trying to promote a Catholic lifestyle. This includes no meat on certain days of the year. (One of my elem. school principals actually confiscated lunches which had the forbidden food.) LOL. Anyway, they want to uphold all of the Catholic traditions, and since you go to their school, you agree to take part in those traditions (or at least not complain too much) 
As for the fish… I did not know the fish was another symbol for Christianity until after I was out of high school (and saw a bumper sticker  ). Technically, for Catholics and certain other Christian religions, the cross is the only recognized symbol. The fish kind of died out for most groups, especially when the Darwinians altered it. However, it is still used by the Christian groups who do not want to use the cross because of its earlier Pagan use.
