Also, the point of stewed tomatoes is to have fresh-tasting sauce. Be sure to try and boil most of the water out (or, just use a half cup less water with your rice).

I've never cooked with amaranth, but it's similar enough to rice, so you'll probably only have to change how much water you put in. Interesting that you'd put in something banned by the Spanish into their rice, though. Go for it!
