      Simple Recipes

Post some good simple recipes that you like. Mine is so easy, I know it by heart.

Chocolate covered pretzels....(not the "regular" kind)

      Bake: 170*F

      Ingredients:

Simply, pretzels, preferably the waffle kind, mini ones
      M and Ms
Hershey Kisses (I suggest 2 bags)

Then, put pretzels on a jelly roll pan or cookie sheet, and put the kisses on. Bake for 4-6 minutes. Then put on the M and Ms, put in the fridge to harden, and you're done!
If you see a strange typo in my post, blame my iPad for that.

      Ramen with a Kick

1 or 2 packets ramen noodles, preferably chicken or beef
Armful of random spices from the pantry (garlic powder, onion powder, curry, cumin, cayenne pepper, seasoned salt, thyme, chili powder, pepper, and anything else that sounds tasty)
      Water

Directions: Prepare ramen as usual, but add spices and flavor packet immediately. As the measurements are inexact, add a small amount first, then tweak later to taste. Serve and enjoy.

Spanish rice is pretty easy. 1 cup long-grain rice, half a pepper, can of stewed tomatoes, couple spoons of olive oil, clove of garlic, some onion.

Chop all the veggies ahead of time, and mash up/heat the tomatoes (with basil if you have it).
Fry the rice in oil for a few minutes. . . Add the vegetables and sautee. . .
Add the tomatoes, and 2.5 cups water. (Add paprika if you have it, also pepper). Stir for no longer than a minute.
Cover it and set the temp to "low-med," and don't touch it. After about 20 minutes, it's done.

During that 20 minutes, you could be cooking something to go with it~
Serves for 5. The ingredients are cheap as hell, too. Back at college, that's my dinner for the entire week.

I also have recipes for pilaf and eggplant chili (which I improv'd, and am proud of), but those are more time-consuming/labor intensive. Not "hard." Cooking isn't hard. It just takes effort.

I've done something like that before, only your recipe is much more in depth than mine. I might make this for lunch today, will post results.

Also, could I sub in amaranth for rice? I've really been digging amaranth recently.

Also, the point of stewed tomatoes is to have fresh-tasting sauce. Be sure to try and boil most of the water out (or, just use a half cup less water with your rice).

I made it for my family last night, along with Spanish potato pancakes~

I've never cooked with amaranth, but it's similar enough to rice, so you'll probably only have to change how much water you put in. Interesting that you'd put in something banned by the Spanish into their rice, though. Go for it!
