Yah. Dreams reflect what you think about. Tautology warning! If you want a more active fantasy life, maybe you should have a more active fantasy life :-). You could try being more adventurous in the fiction you consume - tv, books, whatever.
I'm not sure about the immersion; no ideas on that. All I can say is that if your dreams are different in that way, and it's not smething to do with your recall, then it's most likely a sort of habit, that has the potential to change.
W.r.t senses I think you should be able to change that. In Exploring The World of Lucid Dreaming theres an exercise where you go through the senses, pay attention to what you can sense now with each one, and imagine what you might sense in a dream. I think paying greater attention to your other senses during the day would help. Also if you run through your senses as an exercise before you go to sleep.
There's a classic question which is related to this: Do we dream in colour? 5 seconds Google didn't give me a proper answer, but I did find this: the rise and fall of the opinion that we dream in black and white coincided with the rise and fall of black and white film media. So what you see in waking life not only affects what you dream about, it also affects how you dream it!
