      Some of my dream scenes are pretty stable, as long as I don't focus too much attention on one aspect of the landscape or surroundings. Then things can get pretty wild! But if I don't pay much attention to my surroundings they tend to stay the same. However, if my mood changes dramatically it can cause the enviornment to change too.

      A lot of stability comes from the perspective you are looking at your world from when dreaming. I usually have the third person sight. If I have first person sight then my dreams are less stable than before. However, even in first person view dreams can be stable. So chin up, it is usually the luck of the draw. If you are just naturally closer to the end of your dream cycle then I imagine things will just naturally be more unstable. I have had many dreams where they are extremely stable, while I have had other dreams that it is not stable at all. Usually vision is the first to go, but you can still feel something like lets say the grass between your toes.
