Some scientists theorize that one of the reasons we dream is so that we can practice scenarios mentally, which makes them easier to perform in waking life.

There was an article printed in Scientific American on a study performed with REM deprived rats that you may be interested in tracking down on this. I think it was run about a year or so ago.

Personally, I would just give it a try and see if it helps. What do you have to lose really?

You might be able to play the song you've never heard while lucid and remember it good enough to be ably to play your dream song after you woken up.

I think it makes more sense to just imagine practicing than 'waste' lucids on something like this though, when instead you could be doing things like summoning things you can't experience in RL. Like you said, famous violinists, composers, expensive violins, concert halls, historical concerts. Something like teleporting yourself onto the Titanic and playing with Wallace Hartley as it sinks, when you could spend 'mundane' time practicing.
