Most people will never experience SP while going to sleep. Since when you fall asleep you gradually move to deeper and deeper levels of sleep, and you don't enter SP until REM, usually after progressing through all of the sleep phases. Upon waking, it's possible to be instantly awakened from REM, and occasionally SP doesn't shut off properly, so you're still paralyzed after waking for a short while.
WILDing induces SP when going to sleep by jumping straight into an REM cycle, skipping other levels of sleep that you normally progress through.
As for how you broke SP while dreaming, there's a few possibilities. You could have just forced your way through SP, or you could have already been slipping out of an REM cycle and SP had been loosened already.
