Some people just will never be interested in lucid dreaming. And some people get their start by having an "accidental" lucid, then looking up to see if they can purposefully induce one.
I'd ask her to tell you what she's seeing and noticing around the room in that very moment. Then, I'd relate that to a dream by saying something along the lines of, "it's exactly like that, but some things can be warped and others simply bizarre-looking. You're all there mentally but in a total fantasy environment created by your mind. You can go anywhere you want just by thinking of it.".
Then explain to her the more "fictional" parts of lucid dreaming, such as how fun it is to fly and do all sorts of lucid stuff. Tell her she can be invincible, that she can jump really far, and the likes.
If she doesn't think lucid dreams can be realistic, dare her to have a lucid and then to touch something with texture, such as brick or something sharp.
