I know I'm replying to a 10 month old thread, but this isn't a topic that can really go outdated.
I read fantasy almost exclusively. I force myself to also read other genres so that I have the experience, but fantasy proves again and again to be the only type of book that really immerses me. Only good fantasy, though. I loved Harry Potter when I was younger, but looking back now they really are kids' books, with flat characters, very "good vs. evil" with few gray areas, entertaining but sort of depthless and cliche.
I can think of a few fantasy series which I'd consider to be the best I've ever read, but for different reasons:
A Song of Ice and Fire by George R. R. Martin
If I'm forced to choose one series, it is this one. This series is incredbile in every way imaginable. Every character is interesting and has depth, the writing style is amazing, beautifully written but not difficult to read. It's extremely entertaining and immersive, a huge world filled with political tension, action, etc. Characters with alluring psychological issues, each character believable and looking out for his or her own interests.
Most fantasy writers tend to focus on a few positive qualities at the expense of others. For example, one might be very good with character depth and emotion, but at the expense of the plot which will be boring and lack action. This series somehow balances all of the positive qualities. Emotion, character depth, action, plot, philosophy, elegant writing, etc. are all abundant in this book. Even if you don't like fantasy, read this series before you die.
An HBO series based on the first book, "A Game of Thrones", is coming out this April.
Others that would make the top of my list:
The Mistborn Trilogy - The most entertaining series I've ever read. While reading this, the atmosphere of my life took on the atmosphere of the book because I was so immersed in it. Easy to read, with a dark, dreary atmosphere and an original system of magic.
The Farseer Trilogy - for how real it felt. It was a fantasy, but the characters were more believable than in any other book. Anything can happen to the characters. It is also very emotional, it literally brought me to tears, and by the end I was infuriated with the author for the injustice at some things that happened. I liked Tigana for similar reasons.
The Gentleman Bastard Sequence - First book The Lies of Locke Lamora. Very good in a different way from most fantasies. It felt a bit like reading a non-fiction book. It doesn't take place in a typical fantasy world, there are no castles or dragons. I hated it for the first 200 pages or so, but by the end it was one of my favorite books. I can't really explain why. The plot is very complicated but evolves gradually so that it isn't confusing, it felt very real and had an original atmosphere.
