I've watched most of the shows you list, and it amazes me that you haven't seen The Wire or Arrested Development. The Wire is slow, I was well into season 2 before I realized just how great it is, but I have to admit the first episode bored me. Now I've watched the whole 5 seasons 3 times and I'm planning to watch it several more. Arrested Development is the comedy, LOTS of details, running gags, hidden jokes, highest rewatch value you could ask for.
Archer is probably the funniest animated show I've seen and doesn't get nearly enough credit and recognition.
Curb is basically Seinfeld 2, and there's even a new Seinfeld episode within one of the episodes of the 6th season.
Adventure Time, 30 Rock, Sherlock, Flight of the Conchords and Firefly were mentioned above and I second those.
Now I'll tell you some that are not so known: If you like british TV, specially comedy (as I can see for you've watched An Idiot Abroad) then you must watch The Office (UK) and Extras. Also in the line of comedy, The Peep Show is the best, along with Spaced, The IT Crowd and the very original Garth Marenghi's Darkplace Hospital (a fake horror show set to be filmed in the 80's with really awkward acting and awful editing, it's a gem). For drama/crime you have Life on Mars (a detective is hit by a car and wakes up in the 70's, not knowing if he's dead, in a comma or travelled back in time) and Wire in the Blood, a more conventional take on crime dramas but with a very interesting main character, psychologist Tony Hill, it's dark and gritty.
Now for HBO shows: Six Feet Under, an original drama about a family who owns a funeral home, dark humor at its best (Michael C. Hall is in it, playing a gay character, very interesting performance if you're used to seeing him as a serial killer).
Band of Brothers, probably the best WWII drama produced, based on and with interviews of real WWII veterans, it's very graphic and intense but also emotional.
And finally Oz, about a high security prison with very interesting prisoners. Lots of characters, sort of like Lost but with a prison instead of an island (and no supernatural stuff), in fact, you'll see some faces from Lost, and from The Wire, and from Dexter.
If you like documentaries (and even if you don't) Planet Earth is literally breath taking.
