      It's only about three months for me. The first month was actually pretty easy, but eventually the meat cravings began. I'm still going strong though. It's more of an experiment than anything else: my plan is not to eat meat for exactly a year, and at the end of the year I'll decide if I want to stay vegetarian for good or go back to my carnivorous ways. I figure I need at least a year to really get a sense of what it's like. Anyway, we'll see how it goes.

      What a friend of mine did for a while was only eat one meal of meat a week, which still considerably cut down her diet. She dared me to go vegetarian as well, so I one-upped and went full-vege. I already wasn't eating more than 3 meals with meat a week, so I made the transition very smoothly. Transitions are always better.

      you probably already know plenty of health and and animal-helping reasons not to eat as much meat as the average american, so I won't list any here

      but even if you just cut down on meat in general, it can make a huuuge difference. that's why I love giving shoutouts to non-snooty vegetarians/vegans whenever I can~

      There are a lot of foods other than meat that can provide the flavor/texture qualities you crave. Some things that hit the spot for me when I was vegan were:

      tempeh: I liked the LiteLife 3-Grain, cut into strips, lightly marinated in cider vinegar, then coated w/ flour and sesame seeds and stir-fried w/ sundry veggies. Shop around, you can find a lot of variance in pricing.

      stuffed grape leaves: If you get bitter ones, you just got a bad brand/batch--they should be extremely savory and make a great snack.

      edamame: young soybeans steamed in the pod and served hot or cold w/ salt--great snack.

      wakame: a tender, fairly mild-flavored seaweed that's great for building up veggie-based stews or rice-cooker meals.

      mushrooms: king oyster, shiitake, maitake, matsutake, chicken-of-the-woods; prepared properly, mushrooms deliver a meaty texture and wonderfully complex flavors. Protein content is low, so while they can be the centerpiece of a dish, you may want to pair them with a complete grain like quinoa or amaranth, and/or legumes. Grilled king oysters and amaranth bordelaise (red-wine sauce) is delicious.

      Some people swear by seitan, too, which is not too tough to make yourself with simple ingredients, but it's not all that healthy, being essentially a super-dense peanut-butter bread.

      It's a danish tradition to use hats like those for all schools. The colour of the band (marine blue in my case) tells which kind of education you were in. In my case it was HTX, which means Higher Technical Exam. Basically, I've graduated nerd school
