The amount of dreams you have will depend on how much sleep you have and your own nuances in your sleep cycles, but you can rest assured you have atleast 3-5 in 8-9 hours sleep

Your recall is something that you will find will skyrocket quickly when you start to pay attention to it. If you're not already, start a dream journal and stick to it. Put as much detail as you can into the entries you make.
